  • A quesadilla, cut in half and packed in lunchbox with sides of black olives and carrots! It'squick and easy to make. Type of cheese (American, jack, provolone) can be adjusted for variety, and if your child will tolerate sneaking in a green vegetable, a little cooked or creamed spinach can be spread on the cheese before grilling or microwaving just until melted.
