If you don't have a small nook-and-cranny waffle iron try an electric george foreman grill for grilling sandwiches.

A quesadilla, cut in half and packed in lunchbox with sides of black olives and carrots! It'squick and easy to make. Type of cheese (American, jack, provolone) can be adjusted for variety, and if your child will tolerate sneaking in a green vegetable, a little cooked or creamed spinach can be spread on the cheese before grilling or microwaving just until melted.

I loved the idea of the updated PB&J sandwich and will try it out in future, but my favorite now is my lentil soup with brown rice risotto and vegetables-I cook on the weekend to eat healthy at work...
