The Beauty of Beans Having just fended off the cold of winter with some Chili Beans, due deference being paid here to actually Chili, my thoughts have turned to the beauty of beans, and how perfect they are for winter. They are of course great in soups, and I do use them weekly when making soup, but sometimes you want something a bit heartier. And for me, trying as I am to cut down on my meat consumption, they offer a great alternative focal point for a meal.

Of course beans have often been enhanced by additions of sausages, bacon, or other meats, which is fine for me as that still cuts down on my consumption of huge chunks of meat, though it may not suit the needs or tastes of everyone. I’m including both vegetarian and meat enhanced options here, but if you like a recipe and don’t want to include the meat consider using alternatives like seitan, or soy based options to mimic the flavors of the recipe. That’s not the route I choose but it sure beats not enjoying these delicious recipes.
