Living in New York, I'm used to apple season, in fact a grew up farming apples part of the year, though admittedly not in New York, in fact in Trentino Italy. Today my apples come from my backyard, along with some supplements from people who do this sort of thing for a living. You see if I relied on my own production I'd be hungry by November, and that simply would not do.
While this is just the beginning of apple season, they will remain a staple in my household well through the spring of next year, but this autunmn we will have to deal with many of the heirloom varieties that simply don't keep well and tend to ripen all at once. In Italy that entailed apple strudel every day and while I loves me a good apple strudel, everyday is just too much. So what to do with all these apples then? Let's get creative and start cooking, or at least looking at some enticing apple recipes!
