Recently, we featured a few great no-cook dinner recipes. That article featured two fantastic chilled summer soups. While these two are delicious hot weather stand-ins, there are so many more amazing cold soups that can serve as an ultimate treat come hot, sticky summer weather.
From gazpacho to cold corn chowder, there are a great number of classic cold soup recipes. We prefer ours with the addition of something crunchy, like baked croutons, crusty French bread, or salted nuts.
While a few of these soups do require some cooking time on the stove to simmer down the fruits or veggies into a creamier base, the following chill in the refrigerator brings them down to an ultra-refreshing temperature come lunch or dinner time. Try one out tonight!
