Flour refers to finely milled grain and there are many options available to today’s consumer. While the guide below offers advice on how much of one flour can take the place of regular wheat flour, it must be remebered that none of these other flours have the gluten that wheat flour has. These substitions are generally made for only a percentage of the total flour called for in any particular recipe.

For every 1 cup of flour called for in a recipe substitute any of the following.

Bean flour              1/4 cup
Buckwheat flour      3/4 cup
Corn meal              7/8 cup (3/4 cup + 2 Tbsps)
Oatmeal                 1.5 cups
Potato flour             5/8 cup ( 1/2 cup + 2 Tbsps)
Rice flour                7/8 cup (3/4 cup + 2 Tbsps)
Rye flour                 1.25 cups
Rye meal                 1 cup
Whole wheat flour    3/4 cup
