One benefit of writing about food and wine all the time is that you are reminded of things you might have forgotten. Take tacos for examples. It's not like I'd forgotten about them actually, but I was reminded while doing some recent, umm, research that summer time is an amazing time for tacos.
We spend all sorts of time slapping things in buns, burgers, sausages, even lobster. mmm Lobster rolls, but the taco seems to get short shrift once we wheel the grill out. Consider how easy it is to grill up your favorite recipes and then wrap them up with some veggies or salsas in a warm tortilla. I tend to prefer corn tortillas, but wheat are fine too. And then there's the added bonus of being super simple, super quick, easy to feed an army with and with virtually no clean up and you have me very motivated to to get to tacoing this summer!
