Guide to Grilling Pork
Just in time for summer, the USDA revised its minimum cooking temperature for whole cuts of pork from 160 degrees F (about 71C) to 145F (about 63C). This represents a small coup for pork lovers who have long known that to truly enjoy leaner cuts like quintessential pork chops, one must be careful not to overcook the meat and rob it of its inherent moisture and ultimately, flavor.
Personally, I’ve been fine cooking pork anywhere from 135F-140F, letting carryover cooking finish up the job under a nice foil tent, delivering satisfying results. Of course, if you want to play it safe, please just go with the temperature you are comfortable with. For those looking to venture beyond the tried and true grilled chicken, here’s another handy quick grilling guide for that other white meat, with a focus on the quicker-cooking cuts, including chops and loin.

You provide a recipe for "stuffed" pork for grilling. How can it be "stuffed" if you don't provide anything or at least do no indicated anything in the recipe to stuff it with?
