Our Favorite Wine With... As we start to soak in the warm rays of the spring time sun our thoughts obviously turn to the lighter wines, and accompanying fare that will grace our tables for months to come. While we tend to get ahead our ourselves, who hasn’t resolutely sat outside as the temperature plunged to their springtime lows, it is nice to start thinking of how we’re going to take advantage of all the crisp white and fresh foods we’ll be enjoying.

As is typical, when we think of these things we think of the familiar. We’ll get bored soon enough and start exploring new frontiers, but first we want to return to the wines we love. Crisp Chardonnays perhaps, a lovely Pinot Grigio, and for many of us Sauvignon Blanc. We all know that Sauvignon Blanc goes perfectly with goat cheese but what about  a few other dishes that really work to highlight the freshness and fruit of this warm weather classic?We asked our panel of wine writers to see what they might come with. Here, to whet your appetite, are their favorite dishes to pair with their favorite Sauvies!

    Late April, early May means one thing: Asparagus season! One of my absolute favorites is white asparagus (you need to use a potato peeler and shave off the tough exterior) tossed with olive oil, salt, and pepper and then thrown on the grill for about 2-4 minutes (depending on the heat of your grill). My absolute favorite pairing is with a Henri Bourgeois Sancerre (100% Sauvignon Blanc) from one of my favorite producers: Henri Bourgeois. thedrunkencyclist.com
