Pairing with Wild Mushroom Lasagna

Pair this savory dish with something fruity


When the weather turns cold, not everyone is looking forward to a meat-heavy meal. While there are many alternative options for people to choose from, there is something decidedly soulful and soothing about a wild mushroom lasagna that makes it a perfect fit for this time of year.

Wild mushroom lasagna is a rich dish that is full of earthy flavors and a nice dash of piquant cheese. Look for a wine that is fruity to contrast that earthiness, yet bright to handle the richness of the cream and cheese used to sauce this style of lasagna. A nice Dolcetto, full of bright, plummy fruit, can exhibit a slightly earthy edge and create a wonderful match for your lasagna.

2010 Bartolo Mascarello Dolcetto $24

This shows off a lipstick-scented nose that is waxy and rosy with fine grassy notes accenting the red fruit. Dusty peppercorn notes appear early on the smooth palate and are joined by mineral red berry fruit that shows real cut. This is perfumed in the mouth with bright acids, succulent red berry fruit and a hint of spice on the back end. The finish is fairly long with plenty of black spice. Tense in a very precise and detailed presentation. 91pts

2010 Marcarini Boschi di Berri Dolcetto $25

Perfumed on the nose with rich wild berry, wildflower and aromatic tree bark notes. This is rich on entry but fairly tight with nice mineral and astringent red fruits that turn quite intense on the back end. Not hugely complex, but aromatic and texturally compelling with good tension and vibrancy on the palate. The deep, wiry fruit drifts off onto the finish. 90pts

2010 Guido Porro Dolcetto Vigna I’Pari $18

This smells bright and red-fruited with very fresh violet notes and lightly medicinal and stony accents on the nose. Even a touch of iron. Lush on entry, this shows a lot of raspberry fruit along with a stony thing on the palate and notes of iron and a little blood. Super red-fruited on the modest finish, this is very well balanced and fresh. Lightly savory with serious tannins and strawberry liqueur fruit persisting on the palate. 89pts

2010 Schiavenza Dolcetto $18

Pretty intense on the nose with plenty of tarry, mineral earth notes layered over nicely spicy black plum and blackberry fruit. Air brings out hints of graphite and violets. Soft on entry, this has plenty of attractive fruit. In fact, this is quite fruity but also nicely tense with fine powdery tannins. Nice cut leads to a finish that is quite dry and firm with some peppery spice. 89pts

    Interesting that these producers are all, first and foremost, Barolo producers, so presumably familiar to you as a Barolo hound. There are specialists in dolcetto, like Chionetti and Anna Maria Abbona, whose products don't treat it as an afterthought but raise it to great heights, while maintaining prices below $20. Abbona is one of the few few Piemontese female winemakers whose name goes on the label, not that of her father or husband or brother. I was lucky enough to learn of her wines while in Italy, but they are available in the US and deserve to be in the company of these. Also worthwhile are the dolcetti of Chiarlo, but not a specialist and, frankly, not in the class of Chionetti and Anna Maria Abbona.
