Mushrooms Stuffed with Rice and Greens paired with Ca' Bolani Refosco Aquileia

Here’s a side dish that could be a light entrée all on its own. Remember, this is a once a year holiday menu, so don’t start thinking that we eat like this all the time! Coming from the Iron Mountain Inn Bed and Breakfast located just above Watauga Lake, high atop a mountain with a section of the Appalachian Trail in the Cherokee National Forest in Tennessee, this recipe draws on its locale for inspiration, yet incorporates an innovative touch as well. It would be a great side for the Porterhouse steak, and would even work well with the Wilson Creek Zinfandel, though during the competition it was paired with the earthier, higher acid Ca’Bolani Refosco. You could also choose the Refosco to pair with the steak, an excellent match, or simply give in to the holiday spirit and serve both!
