Stuffing: Mild to Wild I’m sure you’re hearing all sorts of wine pairing recommendations for the upcoming Thanksgiving day feast. It’s a sweet meal so pair it with sweet wines. Or, turkey is bland so pair it with bland wines, well maybe not so much, but you get the point. we’re all reaching for the touch stone that can serve as the bridge between menu and wine.

Alas the fundamental center of the Thanksgiving day meal is the stuffing. Not only does it flavor the bird, being not afraid to actually stuff my turkey and then eat said stuffing. But it also generally sets the stylistic tone for the meal. Southwestern or traditional, sweet or Italian. The stuffing is fairly easily defined and that style usually carries over to one degree or another to the entirety of the meal. Or, at bare minimum gives some clues to where the chef’s palate lies. So this Thanksgiving take a cue from me and try to work your wine pairing magic based on your stuffing. Here are nine riffs to help get you think about what wine you want to serve this turkey day.
