It’s time. Summer's produce is rolling in so now is the time to take advantage of what's local, fresh and delicious. It seems like summer squash is almost always in season, somewhere. The truth is though that now begins the local season for summer squash and while you can make these recipes year round, they’re never going to be better that they are right now.
Cook them on the stove top, bake them or even fry them, no matter what your style or mood, squash is a flexible friend at meal time. And flexible when it come to wine pairing as well. I’m not going to say that squash is nature’s tofu, but the truth is local squash is best because of it’s flavor, but also for its freshness and healthfulness. Once you're done with the squash in some of these recipes it won’t matter terribly whether you’ve made this today or in February. Your dish will of course be delicious, but if you make it sooner, rather than later it will be that much more delicious!
