With the Super Bowl on so many minds, and it’s accompanying smorgasbord of themed dishes I thought it would be a good time to revisit a recipe proposed for Super Bowl XLIV. That’s 2010 for those of us to lazy to google it. It was a recipe for Jambalaya created by my friend, and New Orleans native and professional Chef Ludovic Gerrets.
I had the good fortune to work with Chef Vic for two years, and among other things he taught me the classic recipes of his home town. I served his Jambalaya in one of my restaurants, and it was always the most popular item on the menu. Not only this a savory, complex and totally satisfying dish, it’ll also feed an army! It’s theperfect recipe to warm the house on Super Bowl Sunday, and you’ll love having the leftovers, assuming you don’t snarf it all down during the game!
