The Amazing Potato The lowly potato. We fry them, mash them, boil them, and bake them, but rarely celebrate them. Today they get all of my attention, which, if you know me shouldn't be surprising. I love potatoes, prepared just about anyway but my preference is boiled. 

Take a great potato, from the hills somewhere, a cool climate and cold soils, and let it age for a few months. The flavors develop and you'll end up with a remarkably perfumed, earthy, nutty and subtly sweet symphony of flavors. Pair it with some great cheese and salumi and you've got a meal fit for a king. Anything else you do will obscure rather than highlight the gorgeous flavors of a great potato, but if you can't get your hands on some killer raw ingredients, well then that's the time for the baking, the frying, and the mashing to commence.
