Today’s Earth Day, and while your plans may involve tree planting, carpooling, or even showering really really quickly (just pick a shorter song), we have another way to celebrate: food.
Whatever your thoughts on Big Agribusiness (and we’d love to hear them), the fact is eating local and sustainable food is good for your community and the environment. But buying “conscientious” can be a challenge. First there’s what I like to call the Farmers Market Intimidation Factor, i.e. the cold sweat that hits as I approach a stand of alien produce. Then there’s the proliferation of “eco-friendly” labels at grocery stores—“organic,” “biodynamic,” the vague and liberally-applied “all natural.”
So to give you a head start, we found five recipes that give starring roles to seasonal, local ingredients from regions around the country. Even changing the way you eat once a week is one small step for earth, one delicious meal for you.
