When you’re cooking with alcohol, there’s always the risk that you’ll consume more than you cook with. But if you’re cooking with tequila, it’s likely you won’t run into this problem—mostly because once you start sipping, your cooking will end. Promptly.
Why cook with tequila (besides the mere excuse to buy it)? Well, for one thing, tequila is an excellent warm-weather spirit, and all of these recipes would do for a relaxed, outdoor dinner party. But tequila also offers the benefits of cooking with any alcohol—it imparts flavors of its own (green, brash, bright in the blanco styles), it cuts through richness, and it enhances the flavors of other ingredients, say tomatillo or lime.
