What to do with Cabbage It may be a bit early to start discussing cabbage recipes, after all cabbage tends to be a staple of the deep winter. The hardiest vegetable, able to be stored in its fresh form for months in a cool root cellar and throughout the year once it was turned into sauerkraut, it is often paired with the preserved meats that were also the staples of last days of winter.

While these pairings continue to be delicious classics, it’s worth taking a new look at cabbage. I love its sweetly earthy flavors and toothsome bite. It’s also inexpensive and decidedly healthy, which is always a good thing.  I’ll tackle sauerkraut recipes at a later date but today let’s welcome the arrival of cooler weather with some great takes on fresh cabbage!
