While browsing the Internet this week, we came across an almost too-easy recipe that looked worthy enough of early morning baking. Intrigued, we read on and in doing so discovered another great food blog.
This week's featured blog, Very Culinary, showcases a range of great recipes, the star of which is the Easy Maple Pecan Pull-Apart Muffins which initially attracted us.
Upon exploring, we learned that the blog's author, Amy, sounds very much like any dear friend. She digs sunflowers, Oreos and dogs, thinks music of the 70s was groovy, and believes that loading the dishwasher is "an art." We think we just met our food blog soulmate.
Okay okay, time for the recipes. For a spicy take on a summertime favorite, we love Amy's recipe for Pasta with Cherry Tomatoes, Jalapenos and Parmesan. Pair that with the Chicken Patties with Mint Yogurt Sauce or Grilled Hawaiian Chicken Thighs and you have a great menu for your next outdoor summer meal.
Looking for something a bit lighter but equally summery? Check out the great recipe for a Tomato and Basil Tart. The flakey, thin crust is a perfect backdrop to the best of the season's tomatoes and basil, all complemented by a great cream cheese pesto sauce. Also worth trying are the Beef and Chili Bean Lettuce Cups and Slacker Sushi Bowls.
We love how Amy can turn any night's dinner into just a few simple steps in these recipes. She even has some great make ahead dinners for weeknights, thanks to our favorite kitchen tool: the Slow Cooker. For those plan ahead days come school year, the Crock Pot Mongolian Beef is a great option. Another great use for that slow cooker are the Slow Cooker Cranberry Chili Mini Meatballs, which are a proven favorite come holiday party season. We know, school and holiday season sound far away, but they really are right around the corner.
If you aren't ready to admit that quite yet, get distracted by some of Amy's great dessert recipes. Here are a few of our favorites: Cookie Dough Dip; White Chocolate and Butterscotch Chip Pretzel Cookies; Deep-dish Chocolate Chip, Caramel, Toffee Cookies (yea, we said it, deep-dish cookies); Blueberry Puff Pastry Tart; Grilled Cinnamon and Sugar Pineapple Rings. Heck, some of those are worth making for breakfast! We won't stop you!
