Today's featured What We've Been Reading Blog, Lick My Spoon, has just the hook we've been looking for: creativity.
Lick My Spoon, written by an increasingly popular writer named Stephanie, has the regular dosage of healthy, comforting and guilty but delicious recipes, all replete with gorgeous photos and approachable, friendly dialogue. While all of this is incredibly appealing by itself, what really attracts us to Stephanie's blog are her more creative posts and recipes. Things like Jambalaya Arancini and Avo-cobb-o keep us coming back to this awesome blog again and again.
Also worth checking out are the Orange Creole Tuna Cakes, made from canned tuna, and the mouthwatering Berries and Whipped Cream with Meringue and Pistachios, for a creative recipe come sweet tooth cravings.
If you are in the mood for something a little more classic, we highly recommend the thoroughly tested and twice improved upon recipe for Tomato Pie. The doughy, rich pizza would be perfect for lunch or dinner, especially when partnered with a quick salad! Also check out the Kale Pesto Quinoa, Melon and Prosciutto Risotto, and Pancetta Mac and Cheese. These recipes are just screaming to be made, and I see some cooking in my near future just looking at them!
For dessert, there is little more we can recommend than Stephanie's post on Frozen Figs. That's right, the only preparation needed is popping the in season figs into your freezer for a few hours. Upon freezing, these gorgeous fruits are turned into a luscious, almost sorbet-like dessert. So simple, yet so delicious.
