I have a serious weakness for southern cuisine. It could be because I spent a portion of my childhood living in Georgia, or it could also be because I still have family residing in Texas. Either way, when I am presented with a plate of shrimp and grits with Andouille sausage, biscuits and gravy, or anything with gravy, really, it takes little to no effort to convince me to eat it.
If southern comfort food was the cure for any disease, this week’s food blog of the week, Southern Pink Lemonade, would be one hell of a pharmacy.
Written by a woman named Heather who resides in Kansas, Southern Pink Lemonade provides a fantastic collection of comforting recipes that pull at the heart strings of anybody yearning for rich Baked Potato Soup, Chili, or Stuffed Shells. Her recipes are fairly simple and easy to follow, and the outcome is always something warm and inviting.
Since I’ve got football on the brain this time of year, I find that a lot of her appetizer recipes are great for football parties. Cheesy Mexican Corn Dip is perfect for some serious chip-dipping, and Baked Portobello Fries with Lemon-Garlic Aioli are a unique and fun twist on any fried potato snack. We also love her Spinach and Artichoke Dip, a classic appetizer that always wins over the crowd.
For some southern-inspired dinners, start with a bowl of Broccoli Cheddar Soup, perfect for cold days that are to come. A hearty dish of Red Beans and Rice, Baked Salmon with Lemon Dill Butter, or Spinach and Feta Stuffed Chicken make a fantastic main dish. Pair that with a side of Roasted Tomatoes and Zucchini Quinoa with Balsamic Dressing for an award-winning meal any night of the week!
To satisfy an insatiable sweet tooth, look no further than Heather’s recipe for Baked Pumpkin Doughnuts with Maple Cinnamon Glaze, or the Mocha Cupcakes. As a former Georgia peach, I may be biased in saying that the Peach Crumble is one of my favorites, but if being biased towards warm peaches topped with a crumbly crust is wrong, I don’t want to be right.
