Eggplants come into their prime from July through October. It currently being late August means it's time for us to do just one thing: start eating eggplant!

The deceptively light vegetable is a favorite around these parts because of its incredible versatility and ability to substitute into a range of meat-based recipes. Lasagnas, sandwiches, pastas and more are all upgraded with the addition of this seasonal veggie.

From Greek-inspired moussaka to Mediterranean baba ghanoush, there is really so much to do with eggplant. Grill it, smoke it, sauté it, and more - this versatile veggie is used in cuisines from around the globe.
