Baked Turkey Recipes
Roasted turkey and baked turkey tend to be viewed as similar dishes, but as with chicken, there are often significant differences. A roasted turkey typically refers to a whole bird or breast, simply seasoned and served with additional side dishes. A baked turkey dish often refers to turkey parts that are baked with seasonings and vegetables to flavor the turkey and serve as part of the side dishes.
This might seem to be a minor difference, but it presents significantly different opportunities for wine pairing. First, there is the flavor bridge that is created by cooking the bird along with the side dish. These dominant flavors should always be part of the food and wine pairing equation. For example, turkey tetrazzini includes a creamy cheese and mushroom sauce that is wonderful with the turkey and egg noodles, which are the classic accompaniment to the dish. In this case, you have to pair your wine with that cheesy mushroom sauce rather than the turkey. A whole new set of wines present themselves as up to the challenge, and I’d go with a nice Nebbiolo or Chianti. By taking your cues from all the ingredients in a dish you can find more varied and often more appropriate pairings then if you simply focus on the main protein.
