Beef Tacos with Onion Jam and Horseradish Cream

• 2 tablespoon(s) red wine vinegar
• 2 tablespoon(s) honey
• 4 teaspoon(s) horseradish - prepared
• 2 cup(s) beef stock
• 2 red onions

  • 1 tablespoon(s) fresh lemon thyme - chopped, or regular thyme
  • 8 ounce(s) sour cream - light or regular
  • 10 flour tortillas - white or wheat, 7-9" diameter
