Grilled Mini Meat Loaves


  • 0.5 cup(s) chopped basil
  • 2 1/3-inch-thick slices of firm white bread
  • 1 pound(s) ground beef chuck
  • 2 tablespoon(s) freshly grated Parmigiano-Reggiano cheese
  • 3 tablespoon(s) extra-virgin olive oil
  • 5 1/2-inch cubes of fresh mozzarella
  • 4 scallions
