Ingredients

  • 2 cups trimmed arugula or spinach
  • 4 (4-ounce) beef tenderloin steaks (1 1/2 inches thick), trimmed
  • 1 tablespoon olive oil
  • Cooking spray
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt or 1/4 teaspoon table salt
