Stuffed Blue Cheese Burgers


  • 2 cups pre-sliced mushrooms
  • Cooking spray
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1 teaspoon olive oil
  • 4 (2.4-ounce) Kaiser rolls
  • 1 large sweet onion, thinly sliced and separated into rings
  • + 3 more ingredients
    • 4 teaspoons creamy mustard blend (such as Dijonnaise)
    • ¼ cup (1 ounce) crumbled blue cheese
    • 1 pound ground round

Divide beef into 4 equal portions. Roll each portion into a ball; make a pocket in the side of each ball, and insert 1 tablespoon blue cheese.
