Ingredients

  • 3 tablespoons olive oil
  • 3 thyme
  • Coarse salt
  • 1 pound top round, sirloin or filet mignon
  • 3 fresh flat-leaf parsley
  • 3 oregano
  • 1 teaspoon salt
  • + 2 more ingredients
    • freshly ground black pepper
    • 2 cloves garlic

Blend all ingredients except beef and coarse salt in a food processor. Rub on meat; marinate 2 hours at room temperature or overnight in the refrigerator, turning meat once or twice.
