Peppery Beef Kebabs with Braised Pearl Onions
Ingredients
- 20 rosemary branches
- 40 (6-inch) bamboo skewers
- 60 small white pearl onions
- 1 tablespoon coarsely ground black pepper
- 1 teaspoon fresh rosemary
- 1 tablespoon minced garlic
- 2 teaspoons kosher salt

- 1 pound boneless sirloin steaks, trimmed of excess fat
- 1 tablespoon unsalted butter
Blanch onions in a large pot of boiling water 1 minute and drain, then cool under cold running water. Trim root ends and peel.
