Ingredients

  • 1 large yellow onion (peeled and sliced thin)
  • ¾ lb wild mushrooms (oysters, shiitakes, porcini etc., chopped coarsely)
  • ¼ cup clarified butter/ghee (divided)
  • 2 sprigs fresh thyme
  • 2 cups dry red wine
  • 2 cups homemade beef stock
  • for the wild mushroom & onion reduction sauce
  • + 7 more ingredients
    • 2 tbsp clarified butter/ghee
    • ½ tsp freshly ground black pepper
    • ½ tsp unrefined sea salt
    • 1 egg yolk (beaten)
    • 2 shallots (very finely minced)
    • 1 lb ground grass-fed beef
    • for the salisbury steaks

1. Toss ground beef, minced shallots together in a mixing bowl and stir to combine roughly. Fold in beaten egg, salt and pepper.
