Asian Beef and Noodle-Filled Lettuce Cups

Ingredients

  • 2 teaspoons sugar
  • 2 teaspoons low-sodium soy sauce
  • ½ cup matchstick-cut carrots
  • 2 teaspoons bottled minced garlic
  • 4 Boston lettuce leaves
  • 3 ounces uncooked rice vermicelli
  • ¼ cup chopped dry-roasted peanuts
  • + 6 more ingredients
    • 1/3 cup chopped red bell pepper
    • 12 ounces ground sirloin
    • 3 tablespoons chopped fresh mint
    • 1/3 cup prechopped onion
    • ½ cup chopped cucumber
    • ¼ cup fresh lime juice

1. Cook pasta according to package directions, omitting salt and fat. Drain and rinse under cold water; drain. 2. Heat a large nonstick skillet over medium-high heat.
