Baked Penne with Four Cheeses

Ingredients

  • mozzarella cheese, finely shredded
  • for sprinkling
  • ½ teaspoon nutmeg
  • 4 oz asiago, grated
  • 4 oz grated Parmesan cheese
  • 1 egg
  • 5 oz frozen chopped spinach
  • + 14 more ingredients
    • 15 ounce ricotta cheese
    • for the cheese mixture:
    • pepper
    • 1 teaspoon oregano
    • 1 tablespoon red pepper flakes
    • 2 tablespoons olive oil
    • 3 tablespoons tomato paste
    • 2 garlic cloves, minced
    • 1 carrot, chopped
    • 1 onion, chopped
    • 32 oz can tomatoes in puree, chopped*
    • ¾ lb ground beef
    • for the sauce:
    • 12 oz short tubular pasta like penne or ziti

Preheat oven to 350. Grease a 9x13-inch baking dish. Cook pasta until almost al dente. Set aside. In a large bowl, mix together all of the ingredients of the cheese mixture. Set aside.
