Beef-and-Mushroom Stew

Ingredients

• Flat-leaf parsley sprigs (optional)
• 1 cup dry vermouth
• 2 tablespoons all-purpose flour
• 3 tablespoons fresh orange juice
• Cooking spray
• 1 teaspoon dried basil
• 1 cup low-salt chicken broth

  • 3 cups crimini or button mushrooms (about 1/2 pound), halved
  • 1 pound lean beef stew meat
  • ¼ teaspoon pepper

  • 3 garlic cloves, crushed
