Beef and Star Anise Noodle Soup
Ingredients

- freshly ground black pepper
- 8 ounces baby bok choy, stalks separated
- ¼ cup soy sauce
- 21 ounces fresh or 12 oz. dried thick wheat noodles, such as udon
- 2 pounds beef short ribs
- 2 tablespoons minced ginger

- 4 star anise pods, broken
- 4 whole dried Thai chiles
- 3 tablespoons vegetable oil
- 5 cups reduced-sodium beef broth
1. In a medium bowl, combine ribs with soy sauce, ginger, garlic, chiles, and star anise. Cover and chill at least 1 hour and up to 1 day, stirring occasionally. 2. Preheat oven to 300°.
