  • 8 ounces baby bok choy, stalks separated
  • freshly ground black pepper
  • 21 ounces fresh or 12 oz. dried thick wheat noodles, such as udon
  • 2 tablespoons minced ginger
  • 3 tablespoons vegetable oil
  • Salt
  • 4 star anise pods, broken
  • + 5 more ingredients
    • 4 whole dried Thai chiles
    • ¼ cup soy sauce
    • 5 cups reduced-sodium beef broth
    • 2 tablespoons minced garlic
    • 2 pounds beef short ribs
