Beef Curry with Toasted Spices

Ingredients

  • 2 cups plain low-fat yogurt
  • 2 tablespoons Hungarian sweet paprika
  • Beef:
  • 1 tablespoon Homemade Curry Powder
  • 3 bay leaves
  • 2 tablespoons sugar
  • ½ cup tomato puree
  • + 20 more ingredients
    • ½ teaspoon ground cardamom
    • ¼ teaspoon salt
    • 1 (1-inch) cinnamon stick, broken
    • ½ cup minced fresh cilantro stems
    • 1 cup chopped red bell pepper
    • 1 ½ cups low-salt beef broth
    • Remaining ingredients:
    • 2 dried hot red chiles
    • 2 teaspoons freshly ground black pepper
    • 2 teaspoons fenugreek seeds
    • 1 tablespoon cumin seeds
    • 2 tablespoons coriander seeds
    • 1 ½ teaspoons salt
    • 3 whole cloves
    • 3 ½ pounds beef stew meat, trimmed and cut into bite-sized pieces
    • Toasted spices:
    • 1 tablespoon olive oil, divided
    • 3 cups vertically sliced onion
    • 3 tablespoons minced peeled fresh ginger
    • ¼ cup minced garlic
