Beef Daube
Ingredients
- 3 medium carrots
- 1 750-ml bottle of dry red wine
- 4 ½ pounds boneless beef chuck, excess fat trimmed
- 1 tablespoon olive oil
- 5 tablespoons all purpose flour
- fresh parsley
- 2 garlic cloves
