Ingredients

  • 1 large onion, diced
  • ¼ cup flour
  • 6 sprigs fresh flat-leaf parsley, chopped
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups good-quality beef stock
  • 1 pound button mushrooms, trimmed and thinly sliced
  • + 3 more ingredients
    • ½ teaspoon freshly ground black pepper, plus more to taste 3 pounds
    • 3 ½ pounds meaty short ribs, cut flanken style
    • 1 teaspoon kosher salt, plus more to taste

Preheat oven to 325° F. Combine the flour, salt, and pepper and dredge the short ribs.
