Beef with Spicy Cocoa Gravy
Ingredients
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons ground cumin
- 1 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 1 tablespoon unsweetened cocoa
- 1 ½ pounds top round steak, trimmed and cut into 1-inch cubes
- 1/8 teaspoon freshly ground black pepper

- 1 tablespoon ground coriander
- ½ cup all-purpose flour (about 2 1/4 ounces)
- 1 tablespoon olive oil
- 1 (14.5-ounce) can diced organic fire-roasted tomatoes, undrained (such as Muir Glen)
- ½ cup chopped onion
- ½ cup chopped green bell pepper
- ½ cup dry red wine
- 2 cups fat-free, less-sodium beef broth
- Fresh oregano (optional)
- 1 ½ teaspoons paprika
- 1 ½ teaspoons dried oregano
Combine unsweetened cocoa and next 7 ingredients (through cinnamon) in a large bowl. Add beef; toss to coat. Remove beef from bowl. Lightly spoon flour into a dry measuring cup; level with a knife.
