Butternut Squash Stew

Ingredients

  • 3 T olive oil
  • 1 onion, peeled and chopped
  • 2 garlic cloves, chopped
  • 1 T minced fresh rosemary
  • 1 T chopped fresh thyme
  • 2 lb stew beef, cut into 2-inch cubes
  • 1 t salt, plus more to taste
  • + 8 more ingredients
    • ½ t freshly ground black pepper, plus more to taste
    • 2 T all-purpose flour
    • 1 c Marsala wine
    • 1 lb butternut squash, trimmed and cut into 2-inch cubes
    • ¼ c chopped sun-dried tomatoes
    • 3 to 4 c beef broth
    • 2 T fresh chopped flat-leaf parsley
    • Crusty bread, for serving
