Chef John's Beef Goulash

Ingredients

  • 2 ½ pounds boneless beef chuck roast, cut into 2-inch cubes
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • 2 tablespoons Hungarian paprika
  • 2 teaspoons caraway seeds, crushed

    • 4 cups chicken broth, divided
    • ¼ cup tomato paste
    • 3 cloves garlic, crushed

    • 1 teaspoon white sugar
    • ½ teaspoon salt, or to taste
    • 1 bay leaf
    • 1 teaspoon freshly ground black pepper
