Corned Beef and Beet Hash

Ingredients

• 2 cup(s) chopped leftover cooked Cook's® Corned Beef
• chopped fresh parsley (optional)
• ¼ cup(s) oil
• ¼ teaspoon(s) salt
• ½ teaspoon(s) coarsely ground black pepper
• 1 medium onion, chopped (about ½ cup)
• 1 can(s) (8 ounces) sliced beets, drained, finely chopped

• • 1 pound(s) red potatoes, cooked, finely chopped (about 2 cups)
