Ingredients

  • 1 medium onion
  • ½ cup water
  • 2 ½ cups unbleached all-purpose flour
  • 1 ½ teaspoons kosher salt
  • 2 garlic cloves
  • 1 large russet (baking) potato
  • 2 tablespoons fresh flat-leaf parsley
