Ingredients

  • 2 tablespoons minced peeled fresh ginger
  • 1 tablespoon Thai chile sauce
  • Cooking spray
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon vegetable oil
  • 1 (14 1/4-ounce) can low-salt beef broth
  • 1 bay leaf
  • + 14 more ingredients
    • 1 cup (1-inch-thick) sliced celery
    • 2 cups (1-inch) cubed peeled sweet potato
    • 1 ½ cups (1-inch-thick) sliced carrot
    • 1 tablespoon curry powder
    • 1 (8-ounce) package presliced mushrooms
    • 4 garlic cloves, peeled
    • ½ cup light coconut milk
    • ½ cup chopped green onions
    • 3 tablespoons fresh orange juice
    • 1 pound beef stew meat
    • 1 (3-inch) cinnamon stick
    • Paste:

    • 2 serrano chiles, seeded and finely chopped

To prepare paste, combine first 6 ingredients in a blender; process until smooth. Spoon into a bowl. To prepare stew, heat a Dutch oven coated with cooking spray over medium-high heat.
