- 1 (2 ½-pound) beef brisket, trimmed
- 1 ½ cups chopped onion
- 1 teaspoon dried oregano
- 1/3 cup chopped pitted kalamata olives
- 1 (14.5-ounce) can diced tomatoes, undrained
