  • 8 small asparagus spears
  • 1 tablespoon olive oil
  • ½ cup half-and-half
  • 1 cup dry white wine
  • 2 teaspoons finely chopped fresh thyme
  • 4 (4-ounce) beef tenderloin steaks
  • ½ cup beef consommé
  • + 4 more ingredients
    • 1 ½ ounces crumbled blue cheese
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 1 tablespoon butter

Rub steaks with chopped thyme, salt, and pepper. Melt butter in a large skillet over medium heat; add oil. Add steaks, and cook 1 to 3 minutes on each side or to desired degree of doneness.
