Feijoada (Meat Stew with Black Beans)

Ingredients

  • 2 pound smoked pork spareribs or smoked pork chops
  • ¾ pound slab bacon
  • Freshly ground black pepper as needed
  • 2 tablespoon peanut or olive oil
  • 1 ½ pound boneless beef chuck or eye round
  • 1 ham hock
  • 1 ½ cups dry black beans

    • 1 pound corned beef
    • ¼ pound chorizo
    • 1 pig's foot
    • 12 cups low sodium or homemade chicken broth or water
    • 1 bay leaf
    • 1 ½ cups onion
    • 2 teaspoon garlic

    • Salt as needed
