Ingredients

  • 1 tablespoon chopped fresh parsley
  • ¾ teaspoon black pepper, divided
  • Cooking spray
  • 2 garlic cloves, minced
  • 1 ¼ teaspoons kosher salt, divided
  • 2 (8-ounce) beef shoulder tender roasts, trimmed
  • 2 tablespoons chopped fresh thyme, divided
  • + 3 more ingredients
    • 1 tablespoon chopped fresh rosemary
    • 1 (20-ounce) package refrigerated potato wedges (such as Simply Potatoes)
    • 2 ½ tablespoons olive oil, divided

1. Preheat broiler. 2. Combine 1 tablespoon thyme, rosemary, parsley, 1 tablespoon oil, 3/4 teaspoon salt, 1/2 teaspoon pepper, and garlic; rub evenly over both sides of beef.
