Herbed Tomato Consommé


  • ½ cup dry sherry
  • 1 small bay leaf
  • 2 cups cocktail vegetable juice
  • 1 green onion, finely chopped
  • 1 cup Chablis or other dry white wine
  • 2 whole peppercorns
  • Fresh basil leaves (optional)
  • + 3 more ingredients
    • 1 clove garlic, halved
    • 2 cups beef broth
    • 1 teaspoon dried whole basil leaves

Combine all ingredients, except fresh basil leaves, in a large non-aluminum saucepan; bring to a boil, and boil 1 minute. Strain mixture, and discard residue.
