Ingredients
- 1 teaspoon kosher salt
- 2 cups beef broth (homemade or canned)
- 1 pound veal top-round steak
- Freshly ground black pepper
- 2 bay leaves
- 2 tablespoons fresh thyme leaves
- 1 tablespoon garlic

- 1 cup celery
- 1 cup red bell pepper

- 2 tablespoons fresh parsley
- ¼ cup olive oil
- 2 cups onion
- 1 tablespoon fresh rosemary leaves

Cut beef and veal into 2-inch pieces. Combine flour, kosher salt, and freshly ground black pepper in a small bowl.
