Irish Beef Stew

Ingredients

• 6 cup(s) beef broth
• 1 cup(s) dry red wine
• ¼ cup(s) tomato paste
• 1 tablespoon(s) honey or sugar
• 3 teaspoon(s) dried thyme leaves, crushed
• 1 large sweet onion, chopped
• 2 ½ cup(s) carrots, peeled and cut into 1" chunks

  • 2 tablespoon(s) canola oil
  • 6 clove(s) garlic, finely chopped
  • 1 cup(s) stout beer
  • 1 tablespoon(s) Worcestershire sauce
  • 7 cup(s) russet potatoes, peeled and cut into 1" cubes
  • 1 ½ pound(s) beef brisket or stew meat, cut into bite size pieces
  • 2 bay leaves
  • 2 tablespoon(s) olive oil
